Simple 15 Mins One Pot Meal Recipe: Kimchi Jiggae with Ayam Brand’s Sardine in Olive Oil

I’m a self proclaimed foodie. I absolutely love food. But of course, my love for food is not quite unconditional. I love food, yes, but I don’t always love cooking. I’m the sort of person who detest cooking, especially if the time to cook certain food takes longer the time I will spend to actually eat the dishes that I prepared. And the time I have to spend cleaning up? I hate that even more, and therefore, most of the things that I cook will always be a quickie meal or uncomplicated, easy to prepare one pot meals that can be done within 15 minutes.

Anyway, here’s sharing with you one of my all time favourite one pot meal dish that I usually will prepare for my husband and son on days I feel like playing the good wife and mum; Simple 15mins One Pot Meal: Kimchi Jiggae. This can be served all day long, including during iftar/sahur during Ramadan.

Kimchi-jjigae or kimchi stew is a stew-like Korean dish, made with kimchi and other ingredients, such as scallions, onions, diced tofu and and seafood. It is one of the most common dish in Korea.

Below is my version of Kimchi Jiggae:

Ingredients:
200ml of water
2 tablespoon of Gochujang (Korean Chilli Paste)*

1 cup of kimchi, preferably cabbage kimchi*

1 pack of Shimeiji mushroom, cleaned and cut

1 onion, sliced

1 tube of soft tofu/Japanese egg tofu

1 can of Ayam Brand’s Sardine in Olive Oil

Cooking method:

1. Pour 200ml of water into the pot.
2. Stir in 2 tablespoon of Gochujang and let it dissolve in the water.
3. Add in sliced onions, soft tofu/Japanese tofu, Shimeiji mushroom and 1 can of Ayam Brand’s Sardine in Olive Oil.
4. Bring to boil for 15 mins in the pot. I brought this Mini Steamer in Lazada. You may check this out HERE.
5. Serve with a bowl of piping hot rice and banchan (if any).

Kimchi Jiggae is usually prepared with meat/seafood/poultry, but here I opt for the convenience of the canned Ayam Brand’s Sardine in Olive Oil instead. Sardines immersed in fragrant extra virgin olive oil. This is classic Mediterranean ingredient for salads, bread and pasta, but taste great in stew as well. Ayam Brand’s Sardine fishes are cold water fish. They are rich in proteins which serve as the basis for most of the body’s cell and structures. They are also a natural source of calcium and Omega 3. No preservatives and no added MSG. And a bonus? It is certified Halal by JAKIM and contains extra virgin olive oil which is 100% natural, high vitamin A, D, K & E content, high in polyphenols (a powerful antioxidant) that help to lower blood pressure and rich in oleic acids a monounsaturated fat that reduce the risk of heart disease by lowering bad cholesterol.
