March is a very packed month for me and my hubby. We rarely have any free time for ourselves these days. He’s busy with work while I’m busy with either my writing projects or traveling around.
Last Sunday was a tiring day for us and I thought some energy booster in the form of Sunday Roast would do us some good. Here’s sharing with you the ‘Roasted Chicken Thigh with Spinach Potato Salad’ recipe. I assure you, it’s packed with energy.
Ingredients:
Chicken thighs
Paprika
Pepper
Salt
Spinach
Potatoes
Method:
Marinade the chicken thigh with paprika powder, salt and pepper for 15mins. Roast in the oven at 250’c for 25mins.
Dice some potatoes and boil it for about
5mins before taking it out and sautee lightly til golden brown with spinach. Take out and serve as a side dish to the roasted chicken.
