Chef Kok Chee Kin, The Talented Man Behind The Wok

So, I’ve been mentioning about Dynasty Restaurant, Renaissance Kuala Lumpur Hotel quite alot in both my articles and my social media platforms. You’d probably know by now that this pork-free Chinese restaurant offers delicacies fit to be served even to any imperial family or royalties, befitting of it’s name.

As you know, delicious food does not magically appear out of nowhere. There’s no such things as the kitchen fairies who conjured sumptuos feast for you to indulge on. There’s always meticulous people behind every delicious food that you enjoyed.

Meet the man behind the wok, the man who made all the gastronomic pleasure in Dynasty Restaurant Kuala Lumpur possible; Executive Sous Chef Kok Chee Kin.

With over 20 years of experience under his belt, Executive Sous Chef Kok Chee Kin is no newcomer to the culinary world of fine Chinese cuisine. It has been a long journey climbing the ladder to the coveted top-chefs hat and the envied position as Executive Sous Chef of the acclaimed Dynasty Restaurant. Since becoming a chef de partie at the age of 16, Chef Kin as he is fondly called by his fellow colleagues has worked at Putra World Trade Centre and as Assistant Chinese Banquet Chef at one of the leading hotels in Kuala Lumpur. Chef Kin joined the hotel since its opening and over the years has swiftly moved up the ranks to Chinese Banquet Chef and finally to his current position as Executive Sous Chef. His culinary prowess is matched by his managerial skills, which has twice won him the hotel’s Manager of the Quarter award. Chef Kin’s fascination for the culinary world was what motivated him to be a chef. Over the years, he has combined the kitchens of the various provinces of China, coming up with his own signature dishes and continues to expand his contemporary style of Chinese cooking.

When asked what sort of cooking style he prefers the most, Chef Kin says he prefer Cantonese cuisine for its simple preparation method yet full of natural flavours. He also likes to inject new ideas from Western and Japanese cuisine into traditional Chinese dishes.

Among the must try Chef Kin’s range of signature dishes are; Oriental Grilled Lamb with Mongolian Sauce, Sautéed Garden Greens and Diced Mango, Miniature Nonk Jump Over the Wall, Peking Duck and Baked Cod with Honey Served with Mayonnaise.

I’ve had the privileges to enjoy Chef Kin’s culinary masterpieces a couple of times, and I can assure you that they’re nothing short of majestic.

Wanna have a taste of Chef Kin’s cooking? Well, why are you still reading this and eating your hearts out? Head over to Dynasty Restaurant, Renaissance Hotel Kuala Lumpur and grab a bite.

Collector’s Pick & The Launching of Tourism Malaysia’s Flea Market Galore Booklet at Amcorp Mall, Petaling Jaya

There was a time when the concept of people coming together to buy, sell and trade used or old goods under one roof in a commercial complex seemed alien to Malaysians. It all changed in 1998 when Amcorp Mall embarked on a bold initiative to create an indoor antiques market inspired by one of the most iconic antiques market in the world – the famed Portobello Road market in the United Kingdom.

Amcorp Mall’s infant flea market started small, with just a handful of pioneering antique enthusiasts proudly displaying their prized collections at the lower ground level of the mall.

19 years later, the number of traders has grown close to 300 strong, delighting Amcorp Mall’s patrons with a spread covering four floors of the mall every weekend.

Now an established flea market destination in its own right, Amcorp Mall’s flea market provides its many traders with an opportunity to supplement their income and serves as a favourite gathering place for antique and collectibles enthusiasts.

Running the flea market is not without its share of challenges. Firstly the diverse personalities of the many traders and tenants needs to be balanced with care. Secondly the whole concept of a flea market where items are traded off tabletops may not be everyone’s cup of tea. Yet browsing through such variety of paraphernalia and mingling with the colourful traders and crowd has an undeniable charm not found in more sophisticated boutique type environments.

Despite its fair share of critics particularly in the early years, Amcorp Mall has persevered and continues to dish out a unique flea market experience ‘malaysian style’ that keeps both traders and shoppers coming back.

Whilst keeping true to its focus on the antiques and collectibles market, Amcorp Mall tries to ensure there is something for everyone by opening up opportunities in some measure for other products as well. In particular this has created another niche in the toy market.

Indeed its very own ‘home-grown talent’, flea market trader Azam Husni Mustafa and his band of buddies ‘The Ultimate Cosplayers’ appear in full character costume some Sundays to thrill shoppers with an upclose encounter with such popular comic/action characters as Spiderman, Ironman, Captain America, BumbleBee, Wolverine and more !

Starting out as a passionate hobby for Azam Husni, trading his collection of toys at the second floor of Amcorp Mall Flea Market has allowed him to truly live out his creative talents. And it is precisely this savoury mix of carnival shopping that makes Amcorp Mall’s flea market a must visit for all.

As the nation marks its 60th year of independence, Amcorp Mall is celebrating the occasion with a dedicated two day event aptly named Collectors Pick. This effort is aimed to take Flea Market Tourism in Malaysia to the next level. Visitors will be able to savour under one roof all manner of oldies, oddities and rarities encompassing antiques, curios, old notes, stamps, collectible toys, books, vinyl records and more.a Grand Extravaganza not to be missed !

Amcorp Mall, the pioneer of the Malaysian Indoor Flea Market experience, has since 1998 been the regular happening gathering place for antique enthusiasts looking for the latest gem to add to their collection every weekend.

As the nation marks its 60th year of independence, Amcorp Mall is celebrating the occasion with a dedicated two day event aptly named Collectors Pick. This effort is aimed to take Flea Market Tourism in Malaysia to the next level.

DubuYo Offers Muslim Friendly Urban Korean Food

Been binging on Kdramas? Can’t help but drool over all the delicious Korean food that has been featured not so subtly in those Kdramas? Desperately need to get a fix for your Korean food cravings? Well, don’t book a flight to Korea just yet. Malaysia is quite a global village, and it is a country that is pretty much open to global food culture. There are plenty of restaurants in Malaysia that’s offering Korean delicacies which can be as good as the ones you can find in Korea, if not better.

Being a K-food culture fan myself, I find myself constantly crave for some good Korean food, especially after K-drama binging or after watching my favourite Korean cook YouTuber, Maangchi. Problems? Yes. While Malaysia doesn’t lack restaurants that serve Korean food, as a Muslim, I find it rather difficult to find restaurants that serves Halal or Muslim-friendly Korean food. More often than not, they are non-Halal restaurant.

Lucky for me though there’s always the option of getting my Korean food fix at DubuYo, a restaurant chain that serves Muslim-friendly urban Korean food. DubuYo have plenty of outlets around in Malaysia but the one I frequent often is the Quill City Mall and Nu Sentral outlet.

Having recently heard that they have new items on their menu, I decided to visit again and check it out. True enough, in additions of my all time favourite jiggaes, they really do have some new, limited time items being featured on their menu.

Here’s sharing with you what I had during my most recent visit; Syupeo Chicken Ramyeon, Syupeo Beef Ramyeon, Kimchi Gogi Chicken, Doenjang, Seafood Soondubu Jigae, Honey Mustard Wings, Cheese Rabokki, Pa jeon and Yukgaejang

Syupeo Chicken Ramyeon- RM20.90 (Ala carte) RM23.90 (Set). This is one of the two new limited time only items. Syupeo Chicken Ramyeon is basically Korean ramen. But it’s not your regular plain ramen. Syupeo Chicken Ramyeon is all partied up with crispy fried chicken and dumpling, making it a luxurious and satisfying meal.

Syupeo Beef Ramyeon -RM22.90 (Ala carte) RM25.90 (Set). Syupeo Beef Ramyeon is another one of the new limited time item on DubuYo menu. The ramen is as good as it’s chicken counterpart. It’s served with generous portion of sliced beef and enoki mushrooms.

Kimchi Gogi Chicken- RM 16.10 (Ala carte) RM18.45 (Set). Similar to dak-galbi, this dish is actually chicken cubes stir-fried with kimchi and napa cabbage. This dish is not as fiery as it looks. The red hues is not an indicator of it’s spiciness. Those who can’t take spicy food might want to order this and give it a go.

Doenjang jigae- RM20.75 (Ala carte) RM23.10 (Set). Doenjang jigae or soybean paste stew is a rich, silky jjigae made with doenjang and available ingredients such as vegetables, mushrooms, tofu, seafood and meat. If my tastebuds got it right, I think a small amount of gochujang is also added to this Doenjang jigae as it has hint of spiciness in it.

Seafood Soondubu Jigae- RM19.60 (Ala carte) RM21.90 (Set). Sundubu-jigae or soft tofu stew is my all time favourite whenever I dine in DubuYo. The slightly spicy dish is made with freshly curdled soft tofu, vegetables, seafood and gochujang. Great to be had on it’s own, but lovely to be paired with a bowl of piping hot rice as well.

Honey Mustard Wings- RM19.60 (Ala carte) RM23.10 (Set). I can never resist these savoury chicken wings. They are deliciously addictive, and have it my way, I wouldn’t just stop at the second helping. It is that good.

Cheese Rabokki- RM18.45 (Ala carte) RM19.60 (Set). Ra-bokki is a type of teokbokki, with added ramyeon noodles. It is a street food commonly sold in bunsikjip. As other teokbokki dishes, fish cakes and boiled eggs are a common addition.

Pa jeon- RM 13.35 (Ala carte) RM 14.50 (Set). Pajeon is a variety of Korean pancake with scallion as its prominent ingredient. Served with a side of black vinegar sauce, this dish is great to be had on it’s own. It also makes a great meal companion alongside with banchan. Another one of my favourite order whenever I dine in DubuYo.

Yukgaejang- RM 19.60 (Ala carte) RM21.90 (Set).Yukgaejang or spicy beef soup is a spicy, soup-like Korean dish made from shredded beef with scallions and other ingredients, which are simmered together for a long time.

Dining in DubuYo is always satisfying for me and there’s no difference this time. While my latest visit has satiated my cravings for some jiggae fix, I have no doubt that I’ll be running over to DubuYo again soon enough now that I’m binging on Korean dramas again.

DubuYo have 13 outlets throughout Malaysia as of writing. Should you want to get some of your Korean food fix as well, just hop over to your nearest DubuYo outlet.

You may visit  www.dubuyo.com or www.facebook.com/DubuYo.urbankoreanfood for ongoing promos and more info.

Movie Review: Malay Regiment

Hari Merdeka (Malaysian for ‘Independence Day’), also known as Hari Kebangsaan(National day), refers to the day when the Federation of Malaya’s independence from the British Empire was officially declared. At exactly 09:30 on 31 August 1957, the declaration was read by Tunku Abdul Rahman at the Merdeka Stadium in the presence of thousands of people including Malay Rulers, members of the federal government, and foreign dignitaries. The effort for independence was spearheaded by Tunku Abdul Rahman, the first Prime Minister of Malaysia, who led a delegation of ministers and political leaders of Malaya in negotiations with the British in London for Merdeka, or independence along with the first president of the Malayan Chinese Association (MCA) Tun Dato Sir Tan Cheng Lock and fifth President of Malaysian Indian Congress TunV. T. Sambanthan. The formation of the Federation of Malaysia was then announced on 16 September 1963, as Malaysia Day.

This is a common knowledge for Malaysians who paid attention during history classes in school. But what’s not a common knowledge for most Malaysians is during the times of military insurgency before indepence was achieved. There are many untold stories during this time period, and rarely any production houses made any effort to feature the stories from that timeline in their movies.

But here’s one during that particular time; Malay Regiment. Will be shown in the silverscreens nationwide from 31st August 2017 to commemorate 60 years of independence, Malay Regiment was told in flashback where the story takes the viewers back to the time where the Malay Regiments fought the communists.

I’m not quite a fan of military movies, and therefore, I found the story rather baffling and not quite my kind of thing. Plenty of memorable scenes, though the story felt as if there are missing pieces in it. Storytelling was quite mediocre and it is hard for me to go back and forth from the present to the past. An okay watch if you like history and action.

I rate this movie a 3 star out 5, mostly for effort made to aknowledge the Malay Regiment’s contribution in nation building through the movie.
